The Food on Your Plate Is About to Change — And India Is Already Inside the Revolution

For thousands of years, producing meat, milk and eggs meant raising an animal.

That equation is now being rewritten.

A new food industry is emerging in which microbes can manufacture milk proteins, fermentation can produce egg proteins, and animal cells can grow actual meat—without raising and slaughtering an animal.

And this is no longer just a Silicon Valley science experiment.

It is moving into factories, supermarkets, restaurants and regulatory systems.

The more interesting question is: how soon will it reach the Indian kitchen?


This Is Not “Vegetarian Meat”

There is an important distinction that often gets lost.

Plant-based food imitates meat using soy, peas, wheat and other plants.

Precision fermentation uses microorganisms such as yeast or fungi as tiny biological factories to produce specific proteins. The resulting whey or casein can be molecularly identical to the corresponding dairy protein, even though no cow produced it.

Cultivated meat, meanwhile, starts with animal cells and grows them in controlled environments. It is therefore real animal tissue—not a plant substitute—but produced without raising and slaughtering the entire animal.

That distinction matters because the technology is moving far beyond burgers.


India Has Already Entered the Game

India is not waiting on the sidelines.

In 2022, FSSAI approved Perfect Day’s precision-fermented, non-animal whey protein. FSSAI’s approval records also list non-animal whey protein in applications involving Tata Starbucks and Perfect Day India.

More importantly, Perfect Day and Zydus Lifesciences are building a large-scale precision-fermentation facility in Gujarat, with operations targeted for 2026 and a controlled scale-up into 2027. The facility is intended to manufacture recombinant whey protein.

India also has home-grown companies such as Zero Cow Factory, which is developing animal-free A2 milk proteins through precision fermentation.

And this is now becoming a matter of national biotechnology policy.

Under the government’s BioE3 initiative, fermentation-derived proteins—including animal-free dairy proteins—and cell-culture-derived meat and seafood are explicitly identified as priority areas for research and scale-up.

So yes—the revolution has already begun in India.

But India is currently much further ahead in fermentation-derived ingredients than in cultivated meat.


The Egg May Be the Next Big Surprise

Milk isn’t the only thing microbes can manufacture.

Egg proteins are already moving from laboratory benches to commercial production.

US-based The EVERY Company produces egg-white protein through precision fermentation. In 2026, its OvoPro orders jumped dramatically following expansion into major US retail channels. ADM and EVERY have also announced plans for commercial-scale production of egg-white protein in Iowa.

Think about what that means.

A future bakery could use egg protein without chickens.

A protein drink could contain whey without cows.

A cheese could contain casein without a dairy farm.

And eventually, a steak could contain animal cells without a slaughterhouse.


And Yes — Meat Is Coming

This is where the transformation becomes much more consequential.

Singapore became the first country to approve cultivated meat in 2020. The US followed with its first approvals in 2023, while Israel approved its first cultivated food in 2024. Australia and New Zealand have also established regulatory standards for cell-cultured foods.

India has not reached that stage yet.

FSSAI’s regulatory framework for cultivated meat is still developing, and India has not yet approved a cultivated-meat product.

But Indian companies are already working toward it.

Biokraft Foods, for example, has developed cultivated chicken and cultivated trout using cell-culture and bioprinting technologies. It has been pursuing regulatory approval while working on cultivated seafood.

Another Indian startup, Neat Meatt, is developing non-GMO chicken cell lines and serum-free cultivated-meat technology.

So the question is no longer whether India will investigate cultivated meat.

It already is.


The Real Revolution Is Invisible

The most disruptive part of this technology may not be a futuristic lab-grown steak.

It may be something far less dramatic:

a familiar product on a familiar supermarket shelf whose protein was manufactured by fermentation rather than extracted from an animal.

Consumers may not even notice the transition initially.

Milk proteins.
Egg proteins.
Whey.
Casein.
Gelatin-like ingredients.
Fats.
Then seafood.
Then meat.

The food industry could gradually move from animal farming to biological manufacturing.

And that raises a much bigger question than whether lab-grown food is sustainable:

When biology can manufacture the same molecules, textures and proteins without the animal, what exactly are we paying farms and slaughterhouses to produce?

India—with its enormous dairy industry, huge vegetarian population, biotechnology capability and growing demand for protein—could eventually become one of the world’s most important markets for this transformation.

The cow may not disappear.

The chicken may not disappear.

But the extraordinary possibility is that we may no longer need as many of them to feed billions of people.

And that could change agriculture more profoundly than any food trend of the last century.
